Serves: 24 balls
  • ⅔ cup packed, pitted dates (about 9 to 11), soaked 3 minutes in hot water (and drained) if stiff
  • ½ cup almond butter (or nut/seed butter of choice)
  • 1 large banana (no brown spots--peel should still be all yellow)
  • 1 teaspoon vanilla extract
  • ½ cup plus 2 tablespoons coconut flour, divided
  1. In a food processor, pulse the dates until very finely chopped (almost a paste). Add the nut butter, banana and vanilla; pulse until mixture is blended.
  2. Add ½ cup of the coconut flour to the food processor; pulse until mixture comes together into a cohesive dough.
  3. Place the remaining coconut flour into a shallow dish. Roll the dough into 1-inch balls and roll in coconut flour (prevents stickiness).
Storage: Store balls in an airtight container in the refrigerator for up to 5 days or the freezer for up to 3 months.
