A No-Coffee Latte, Made with Beets!
I love coffee, I love tea, and now… I love lattes made with beets.
I had never heard of a beet latte until I spotting a pink powder-dusted version, procured from Bluestone Lane Coffee in Brooklyn, on Instagram last month.
Beet latte?!! What followed were several minutes of searching for specifics, and (fingers crossed) a recipe. I love hot drinks, and beets, hence I needed specifics to make the pretty-in-pink latte for myself: Were whole beets involved? Beet juice? Cooked beets? Raw beets? It had to be a labor-intensive process, because average NYC coffee shop prices popped up, all in the ballpark of $5 to $7 per (small) cup. Oy vey.
Lucky for me (and soon, for you, too!) recipe guidelines were soon found and a pink latte was soon made. The results? Almost too marvelous for words!

It gets even better. This lovely latte is also:

Pink Latte made with Beet Powder
The key ingredient? Beet powder. Even if you rarely or never buy powders, stay with me! Beet powder is inexpensive and versatile, too (although the pink latte will clinch your affection).
Before saying anything more, allow me to note that I do not work for Big Beet (although it sounds appealing…if only it existed), and I bought this beet powder with my own $. I am simply bubbling with excitement over this new find and I want to share with all of you.
What is Beet Powder?
Here’s the deal: Beet powder is nothing more than beets, dehydated and pulverized into a powder. Multiple brands are readily available from online purveyors (e.g., amazon, vitacost , & bulksupplements.com) for excellent prices (as little as $10/pound). Just be sure you are not buying beetroot powder that is intended for food coloring, as the beets may be of lower quality, and/or cooked before drying and pulverizing.
Beet powder made from dehydrated raw beets retains almost all of the powerful nutrients of fresh beets, including
- potassium
- phosphorus
- iron
- magnesium
- calcium
- Vitamins A, B and C
It also contains betalains, which are the phytonutrients that give beets their dark red color. Beet powder is a convenient, cost effective and frugal way to add more beets to your life (it dissolves easily in liquids), in smoothies, soups, and, of course, pink lattes.
Let’s get back to the specifics of pink lattes, since they are so heavenly.
How to Make a Beet Powder (Pink) Latte
For the most basic option, simply heat some nondairy milk (stovetop, microwave, whichever method you prefer). Next, whisk a small amount of beet powder. The beets have plenty of sweetness, so take a sip and decide whether you want to add a touch of maple syrup, or any other sweetener. Done and delicious!
If you want traditional latte foam (yes, please), heat the milk as directed above. You can froth the milk with a milk frother (like this $6 version; these are worth every penny), with a traditional stick blender, in a high speed blender, or with a regular whisk and some forearm power. Pour the non-frothy milk into a cup with the beet powder, whisk to blend & add any sweetener you like, and then top with foam.
I am crazy about the flavor of this latte–the beet flavor is mellow, sweet and delicious. Even my beet-loathing husband gave it a try and said he liked it (I nearly fainted). If you like, consider adding a drop of vanilla extract, or a tiny pinch of cardamom.

Vegan Pink Power Latte {No Coffee}
A gloriously pink, super-easy, superfood latte made with beet powder, your choice of milk, and a touch of sweetener.
Ingredients
- 8 ounces nondairy milk (I used almond milk for the calculations)
- 1 teaspoon beet powder
- 1 teaspoon maple syrup (or more, as desired)
Instructions
- Place the beet powder in a 12 ounce mug or cup.
- Heat the milk in the microwave or small, stovetop saucepan (over medium heat) for 1 to 2 minutes until hot but not scalding.
- Froth the milk (e.g., small stick milk frother, stick blender, hand whisk, high speed blender). Holding back the frothy portion, pour the milk into the mug. Whisk until blended and add maple syrup to taste
- Spoon frothy milk on top and serve.
Notes
Sweetener Options: Feel free to use any sweetener you like in place of the maple syrup, including no-sugar options such stevia or monkfruit. Add a little and taste before topping with foam; the beet powder is naturally sweet, you may not want much (or any) added sweetener.
Flavor Options: For a variation, consider adding a drop of vanilla extract and/or a tiny pinch of cardamom along with the beet powder.
