Good morning, friends! Long time no see.
I’ve been traveling for work, which included a significant amount of frenzy and mayhem beforehand and long days (but some fun, too) once there. Part of the fun included some rich restaurant NYC eating; it was worth every bite, but I’m happy to be home with Nick, Kevin and all of the other comforts of home.

I’ve been craving fresh vegetables and fruits like nobody’s business, so right after I taught my spin class in the wee hours of this morn. I headed straight to the kitchen to make a bright, sunny smoothie.
Blackberries are a regular feature in my smoothies, but the cucumbers and mint are more recent. You won’t taste the cucumber at all (important for anyone weary of kale smoothies!) , but it delivers a significant morning boost. Cucumbers are packed with phytonutrients and antioxidants; together with the blackberries, I felt the remnants of my post-plane travel dehydration and fatigue expunged with each sip.
The mint in our backyard is coming back to life, so in went a few fragrant, emerald leaves. Mint and berries are made for each other, and it shows in this smoothie. Additionally, it is excellent for calming and rehydrating skin, something I can benefit from any day, but especially after a late night plane ride.

Refresh & Revive: Blackberry, Cucumber & Mint Smoothie

- Yield: 1 1x
Ingredients
- 1/2 of large English (hothouse) cucumber, chopped (I keep the peel on)
- 1 cup fresh blackberries
- 1/2 cup apple juice or water
- 1 cup ice cubes
- 3 to 4 fresh medium mint leaves
Instructions
- Place all of the ingredients in a blender and process on high until smooth. Serve immediately.
Just made this with blackberries and cucumbers picked hours before. Most refreshing drink ever.
